??? Why are you only harvesting 5 months worth of tomatoes? We grow more tomatoes, it seems, than anything else, and can so much sauce, juice, soup stock and whole tomatoes, that we often get enough for more than a year. This is in addition to fresh eating. I love 'em!

I know what I'd do if I was without tomatoes for 7 months of the year: I'd plant a helluva lot more!

The canned goods will freeze & be compromised.

You could open the cans and put the contents in freezer bags & pop into your freezer. This could work for items that freeze & reheat well like sweet corn. Most soups freeze well.
