I agree. Forgetting something when you're visiting Outer Nowhere is a bigger deal than when you forget something on a city trip. I have two packing lists, one for more outdoorsy trips where I may be camping, backpacking, hiking, snorkeling etc., and one for more "civilized" trips, and both lists are very inclusive. Before I start to pack, I go over the appropriate list carefully and cross off anything I won't be needing for that specific trip. Then the actual packing part goes quickly.

I start sorting about a month before. I spread everything out on the bed or hang it on an adjustable rack in our spare bedroom. Then I start choosing and discarding items throughout the month. This gives me lots of time to iron/press outfits to wear.

Everything goes into my suitcase two days prior to the trip.
