Im in NY and will freelance/independent contract here and there but if I work 1 hour that should constitute a full day?

So what if I report the income I make, when I make it, but not all the days i worked? im still applying for full time work also..

Will they know what days I physically worked and what days I didn't?

They may not, but you would, and so might others. As soon as you reported the income, and especially if it was sporadic and didn't take you out of the system, NY would be asking questions. The likelihood that you got paid the day you worked would be pretty low. Also, there are people that just love to report you. I wouldn't do it.

I feel like as long as I'm looking for work full time and reporting any income that comes to me it shouldn't be a problem. The stuff I do on the side are things I love to do and it's very grey what work is considered

Every side job you perform is someone that will be up in business. I'm warning you, it only takes one person to turn on you and if you didn't follow the rules to the letter, it's going to cost you.
