The shuttle crew were not generally scientists and engineers but were essentially military personnel/pilots. 2 weeks is a long time to sit there twiddling their thumbs.

2 astronauts, commander and pilot. Here's the status reports for a random ISS resupply mission, STS-111. The Shuttle crew worked all transfers that used the Shuttle's payload arm - to and from the Shuttle. They assisted in transfering supplies, assisted in monitoring spacewalks and were in charge of using the Shuttle's maneuvering engines to carry out orbital corrections. Probably more, these are pretty high-level reports.
