old Cockney slang, "guvna" is just a loosely-used term for boss or anybody more senior, or just used as a term of endearment. Can't say as I've heard it used since I moved to London, though I don't live in the East End.

Does anyone actually say "Cor blimey!" or is that something only found in movies and TV?

There are still people who say it, but not many, and they tend to be restricted to a small part of London. Saying "blimey" on its own is much wider spread and more common though (I still do it sometimes).

I have only been called "guv" once, and it was by a cockney taxi driver, but I've heard it used a lot more - I just don't have any cockney friends.
