We often transfer flights in Dubai and it's always an overnight stay. One year we stayed two nights so we could actually explore Dubai. Found a nice beach. The architecture is interesting as are the posh malls. But unless you can afford some of those really expensive hotels (one is about $24K/night), then more than two nights is too long.

Dubai Hydropolis is one of the best Underwater Hotel in UAE. It's really amazing idea to design this hotel.
