The title above is a cookbook by vegan chef Lindsay Nixon. Has anyone read this one? If so, what did you think? Some of these books are just 414 variations on a single theme; others are truly helpful at generating ideas and expanding your cooking repetoire. Any reviews by readers here?

We have this book and it's fantastic. There is a great variety and (not replicating or rebuilding on an original theme) they are quick/easy to do. Tonight I cooked up the "Fiesta Bake" and am completely stuffed. The other night the Missus made some muffins that were healthy, filling and yummy. We've also made "Quick burgers" a couple of times now. You're not going to get bored anytime soon, there is more than enough recipes to choose from.

I have all of her cookbooks and they're fantastic. Every recipe can be tweaked to your needs/tastes and the cupcakes/cakes/cookies recipes can be modified to include more or less fruits, sweets, etc.

I'd highly recommend them!

Also, if you're not a 'fan' of Happy Herbivore on Facebook, check out the website sometime. She puts up a weekly 'meal plan' with recipes, a complete shopping list, a snack guide... for $5 a week, it's SO worth it.

I just got the latest one and I can't wait to dive in!
