Shelburne Farms in Shelburne... Marsh-Billings in Woodstock... But note these are not "botanical gardens" like Butchart (sp) Gardens in Victoria; they're more a mix of demonstration farm and historic preservation.
Of course there are a ton of great hikes and forested areas. There's a really great hike on Snake Mountain, S.E. of Addison corners, south of Vergennes. A moderate, not-too-long hike, that ends with spectacular views west of the lake and Adirondacks, from the top of an exposed bluff.
Also, and not to sound negative, but if you're visiting in October, things will be well on their way to dormancy at that point - you'll see fall tree color and a lot of mums on front porches, but not a lot of other natural blooming - the rhodies, shad tree, etc. are spring flowering, not autumn.
