Most adulticide pesticides are either organophosphates or synthetic pyrethroids. Both classes of pesticides are shown to have developmental neurotoxicity issues. As I have an 8 month old, I don't want to be anywhere near the stuff. I know many counties in NC do spray adulticides for mosquitoes so I need to be careful which county I look to reside in.

If that's true then it's most likely down towards the coast. Stupid IMO. The only spraying that goes on around here, as far as I know, is on farm fields. Aerial spraying (crop dusting) may still be done in some places.
I must correct the misconception, I can't speak for other counties but I'm pretty sure that Hendersonville sprays for mosquitos. Twice this summer there was a truck that rolled through my neighborhood and it sprayed out some sort of fog. That fog hung over my area like a blanket for 30 minutes or so. I didn't dare go outside after they sprayed. I have no idea what it was that they sprayed but I know, I don't see too many "skeeters"
Also, on a side note, I saw that truck 4 or 5 times last summer.
