The coach has all the players from her old team. No one knows of her misconduct other than the board. A decision was made to not press charges.
How could no one know of her misconduct if she stole from the player's parents, stole equipment and made a sexual comment to a player's mother? Did no one bother to tell them that they were victims of crime?
The club could also make a statement that recently there were issues with missing equipment and funds but the person who was responsible was no longer with the club without using her name. Let people put 2 and 2 together.

THIS CRAP WENT ON FOR 4 YEARS.
We fired her. The parents have no idea as to why we fired her and we were told by counsel that we could not relay this information. This person is now starting her own club...she ransacked our players and mailing lists and we flat out no longer have a team to compete at this age/gender group.
SOOOO....any advice on how to proceed?
These are all subject to prosecution, should not have gone on for years, and should have been reported to the police. As a former youth soccer league coach and club president for many years, I would have never allowed such a thing to go on nor let it go unreported. The safety of the children is #1, and just firing a coach from their position is not enough. We actually had an embezzling treasurer who ended up in jail, after we reported it and cooperated with the investigation. It's irresponsible of anyone who is aware of a charge of sexual abuse of a minor to not report it to the authorities. Probably now the best solution to the situation you are in now, after time has passed with no one doing the right thing, is move to another city.
There are connotations of butt-grabbing that are not sexual. There is so much room for interpretation there. That will not win in a case.
Stealing is pretty black/white. No one would argue that stealing is OK.
Yes, there are connotations of butt slapping in sports that are not sexual. Without knowing more specifics, the coach's sexual comment makes it sexual.

There's also a difference between grabbing and slapping. Maybe a quick slap on an athlete's butt may not be considered sexual, but actually grabbing an athlete's butt would definitely be considered a sexual assault. And, as you mentioned, the coach also added a sexual comment. At the very least, the op could notify the police and let them decide where to go from there.

If you have proof that she stole money and equipment why wasn't it reported to the police?
Are you sure that one of the board members did not do the stealing? Perhaps, several board members stole the money & equipment together and just blamed her.
Did you steal the money and the equipment?
That is why these things need to be reported to the police. If it is not reported it is not investigated. Perhaps, the rumors will start to fly that it was actually you who stole everything. You will have no way to prove that you did not do it because it was never reported.
You tell them absolutely nothing because you or your work made the idiotic mistake not to prosecute. You will probably be forced to tell them something once this coach abuses someone somewhere down the line. Perfect example of what not to do. Great job!
If that's true about her grabbing a child's butt, you should report it to the police immediately. That's a sexual assault on a minor and is a serious crime. Honestly, I don't know how you could live with yourself with allowing a child sexual predator to get away from punishment.
The parents of the child did not want to pursue charges, they just simply left the program.
Things were poorly managed in the past. But she is gone now...the good news is we have a thriving program that will have athletes to fill these spots in 2 years.

And better auditing practices in place?
