If an interviewer tells you to call if you think of any more questions but they did a good job of explaining everything and it makes sense should you still come up with some to call and ask just to make yourself sound interested in the job.
I do have questions about benefits and pay but I was told not to discuss that until they have made an offer, that way they already want you and you have more a bargiening chip as far as salary.
Honestly, I think that is just put out there without any real expectations of someone calling back. It would be far worse to try and fabricate a question just to call than to not call at all.
I agree with manderly. If you know the persons email you might want to drop them a short e-mail thanking them for the extensive information provided and letting them know you are keenly intersted in the job because "___________." (Insert something that makes you a really good fit.)
I would presume they said it just as a platitude. If you do really have a question, call/email to ask, but don't make something up just to call them. Do send a thank you, regardless.

I didn't have an email but an address and sent them a letter the day after the interview.
