Spain. The lifestyle overall is closer to home, and even though all of Mexico, Central America, and parts of South American are closer, I would physically feel closer to home in Spain. I'm looking in to visiting the extreme northwest. I can study a term in Galicia in Vigo and I think that would be delightful.
Same here. Almost 3/4 of my roots are from Galicia (the 1/4 from Germany), I haven't been there yet, I would really love to go.
If the company can do the visas - the world is your oyster. As far as family life/expat life in spanish-speaking countries. On firsthand experience I would choose:
Santiago, Chile (make sure you get a great expat package - it is expensive)
Buenos Aires, Argentina
Quito, Ecuador
Lima, Peru
Great culture, lots to see and do, good international schools, good expat housing, easy to move around. Safe - all is realtive here. But all are better than Mexico City in that regard. Any of these - I would go in a heartbeat, yesterday. I am a US mom, married to a latino with a 1st grader and golden retreiver. We move every 2-3 years. My hubby is from S. America, but we have lived in Central & South America as well as Europe (Italy)
Spain would be an option, but it is more European - than "latino/hispanic". Spain has lots of history, the european touch of lifestyle, good schools, travel to non-spanish speaking countries, etc. BUT, I would not go if your husband is paid in dollars given the current high value of the Euro. It is MUY, muy caro! Very, very expensive. That can have a huge drain on the relationship. However, if they pay house, school, one car, etc...different expat story. Otherwise you can loose huge percentages of your salary in just a day.

It means Spain is in Europe, duhh!
Latino means Latin American (though it should mean "Latin" as in, Italian lol) and yes, Europe is a lot better than most of Latin America. How come in the year 2014 there's a lot more immigrants from Latin America coming to the US than from Europe?
