I've been to Saratoga many times and it's one of my favorite towns in Wyoming. They have a free hot spring pool (called the hobo pool) in town right on the river and there are also some springs in the river itself. It's incredibly relaxing to sit in the springs in the summer. As for lodging, The Saratoga Resort (Welcome to the Saratoga Resort & Spa) seems to fit what you are looking for except it's not rustic by any means. They have their own hot spring-fed pool.
