    Observation: The Hobart dough mixer and dough hook was moderately/heavily soiled. Was last used
  • Test kit provided and used to measure sanitizing solution concentration
    Observation: There were no test strips to check the concentration level of the sanitizer.
  • Foods prepared in a private home may not be used of offered for human consumption
    Observation: There were jars of home made apparent horseradish and salsa in the reach in refrigerator. Corrected on site by removing from the premise.

    Increase the cleaning frequency of the large Hobart mixer bowl and dough hook, and include the underneath side of both Hobart mixers. Ice for human consumption and ice used for exterior cooling of the soda cooling plate in the bar area must be completely separate for protection from cross-contamination. Repeat Violation.

    Observed some salads and prepared meat in reach-in cooler not datemarked. Corrected onsite and guidance document left for reference.

    Box of personal items in reach-in cooler includes some home-canned vegetables that the owner has agreed to remove from the restaurant for correction. Repeat violation.
  • Design and construction of equipment including
    hot oil filtering equipment, can openers, non-food contact surfaces, kick plates, ventilation hood systems filters, bearings and gear boxes, and condenser units
  • Food temperature measuring devices are provided and readily accessible
    Thin probe tip sensitive digital thermometer is required for use on thin foods such as burger patties.
