Observed gravy and stroganoff cooling in tightly closed plastic containers in walk-in cooler, with the food more than 3 inches deep. Cool foods in metal or glass containers, loosely covered to allow steam to escape, with the food no deeper than 3 inches. Cool to 70 degrees within 2 hours, then down to 41 degrees or below within an additional 4 hours.

Walk-in cooler at 47 degrees and kitchen refrigerator at 47 degrees. Both units were turned down. Corrected.

Observed a flat of raw shell eggs stored with and above other foods. Corrected.

Quat sanitizer is in use, but O-San test papers are the only test papers available. Obtain quat test papers - must be at least 200 ppm.

- Handwashing facilities (Handwashing signs not posted 6-301.14, pg 173)
Restroom handsink needs handwashing sign.
- Plumbing: installed/maintained (Service or mop sink requirment not met 5-203.13, p 150)
There is no mop sink in the building.

Clean exhaust hood and fan on wall by the broaster, and clean the wall.
