Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods Observation: Raw sausages and raw pork loins displayed over calzones and pizzas. Display was adjusted so cross contamination is preventable.
Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean Observation: Large accumulation of liquid in the bottom of the ham cooler. Liquid was removed from cooler. Surfaces of cooler were cleaned and sanitized.
Food storage - preventing contamination from the premises Observation: Multiple rolls of pre-packaged dough on the floor, underneath the shelves, in the walk in cooler. Hams in the ham cooler sitting in large accumulation of liquid. Dough picked up off the floor. Grates placed in ham cooler so hams are not in direct contact with the floor and liquids that may build up.
Raw animal foods separated from each other during storage, separation, holding, and display Observation: Raw ground beef stored over raw pork in the display cooler. Raw chicken stored over raw ground beef stored over raw pork chops in the walk in cooler. Raw meats were moved around in storage and display so that chicken is on the bottom, ground meats are above chicken, and whole muscle cuts of pork (and beef) are above ground meats.
