Observation: Entire dairy retail case was in temp except for hanging shred cheese area which was 49.5 deg today.

Observation: no thermometer present in burrito and brat bunker

Observation:thermometer in fish freezer by deli is inaccurate.

- Where to wash
Observation: other store staff were washing hands in the warewashing sinks which had dishes in them instead of using the hand sink right next to them.
- Eating, drinking, or using tobacco
Observation: kitchen food handler was eating in kitchen between customers during my entire visit. Should be limited to break area and wash hands before returning to work
- Utensils and pressure measuring devices maintained
Observation: 3 rubber spatulas should be removed from service
- Bare hand contact with ready to eat foods
Observation:ready to eat rolls were observed several times handled with bare hands. Use tongs or glove instead

Observation: shred cheese 52.2deg, cream cheese 51.5deg, cinnamon roll dough 45.5 deg using my digital stem thermometer today-portion of the dairy case appears to not be working. Cut melon 45.6deg and fresh salsa 46.5 deg (therm agreed) produce cooler may need adjusted colder.

Observation: spray bottle in meat dept wasn't labeled
- Stored frozen foods shall be maintained frozen
Observation: north end of freezer section food was not frozen. This section was 41deg with lots of condensation and soggy boxed foods. Unit was rebounding by end of inspection and had reached 23deg-perhaps defrost cycle is lasting too long
- When to wash
Observation: observed several times when kitchen food handler should have washed hands during today's inspection. Please go through when to wash hands with all food handlers.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: no visible thermometer in retail meat case. Thermometer was on top of cooling vent in dairy case-should be in warmest part of unit
- Cleanability of floors, walls, and ceilings
Observation: huge gap in the floor/wall juncture behind deli which is not smooth and easily cleanable.
