Observation: Raw chicken packages stored on top of raw burger packages in bunker cooler directly across from meat counter. Employee moved chicken to proper area.

Observation: Ground beef tubes stored above ready to eat pepperoni in the end cap of meat department.

Observation: Deli slicer in deli department had visible build up after cleaning. Employee broke the slicer back down to clean.
- Foods are cooled using appropriate methods
Observation: Manager stated that hot food from hot case in kitchen area is removed at the end of the evening, tightly wrapped and placed in walk-in cooler to go through cooling process. Food from previous night was noted as being in the walk in and tightly wrapped.
- Sanitization of food contact surfaces - before use and after cleaning
Observation: Sanitizer bucket not available at meat counter and slicing/prep area. Employee filled sanitizer bucket and place it in the meat counter area.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: Pizza prep cooler in the pizza area missing thermometer for ambient air temperatures.
