    Observation:Badly dented can on can rack in kitchen. Product was voluntarily removed. Corrected.

    Observation: Bottom of deli case has heavy food debris.

    Observation:Slicer in kitchen area heavily soiled with food debris. Slicer was thoroughly cleaned and sanitized. Corrected.

    Several food items in walk-in cooler are dated with 8 day life, cannot exceed 7 days-discussed with mgr and dates were changed
  • equipment food contact surfaces and utensils clean to sight and touch.
    Meat slicer in Kitchen and Meat Dept were dirty on rear underside of blade-scheduled for recleaning
  • Sanitization methods - hot water, chemical
    Chemical sanitizer out at 3 comp sink-replaced during inspection
  • Test kit provided and used to measure sanitizing solution concentration
    Test kit that was available had fallen in water and was no longer useable-replace
  • Storage and maintenance of wet and dry wiping cloths
    Kitchen -wiping towel on prep cooler cutting board-must be kept in sanitizer water when not in use
