      Items on toppings table being re-heated in steam tables. Re-heating needs to be done through the oven or in microwave to 165F. Hold items in steam table at or above 135F. Corrected on site.

      No employee washed hands while inspector was on site. This needs to be remedied immediately. Handwashing is a critical step in keeping food safe!

      General cleaning is needed throughout kitchen facility. Maintaining proper cleaning will lower contamination thoughout kitchen.

      Fume hood above fryer area has excessive build-up. Clean area often to eliminate build-up and reduce risk of contamination from overhead.

      Single serve articles are stored on counters without protection. Straws are stored without protection. Single serve silverware is stored with the handle down-reverse. Can opener holder is very dirty. Dough mixer is very dirty. The fryer has excessive grease hanging on the outside. Pizza boxes are stored on the floor. The make table appears to be molding.

      The 3 comp sink is very dirty and covered with old food debri on the outsides and along the pipes. The walk in cooler is in very poor condition and has excess slime around the drain and the drain lines are very dirty.
