Observation: tomato sauce 48deg today in pizza make table. Product on bottom of cooler was over 50deg. Should be 41deg or less. Called for service. Food needs to be moved to walkin until unit is repaired.

Observation: there is some mold growth on the outside of the pizza make table. Inside is in need of cleaning too.
- Storage and maintenance of wet and dry wiping cloths
Observation: wiping cloths should be stored in bucket of sanitizing solution between uses. If using dry cloth it needs to be kept clean and dry and used with a bottle of spray sanitizer which is food safe.
- Restriction-presence and use
Observation: degreaser is used to clean food contact surfaces. Should use a chemical which is safe for food contact surfaces such as your quat sanitizer. Mix per label instructions.
