Observation:Observed cooked beef stored with raw beef roast in retail display cooler, rearranged display, corrected on site.

Observation:Only cheese curds vacuum-packaged on site were logged, block cheese processing dates were not logged. Charts were printed, corrected on site.

Observation:Observed exposed electrical lines at Cool-Bot cooling station in walk-in cooler, photo was taken.

Observation:Observed large hole in ceiling at back storeroom on south edge of kitchen - roof appears to have leaked over shelves with catering equipment, photo was taken. New handsink at retail counter is not sealed/caulked to the wall.

Observation:Block cheeses with sell-by dates of 8-29 (3 total) and 9-10 (2 total) in the retail display cooler were removed from sale, corrected on site.
