- Storage and maintenance of wet and dry wiping cloths
Observation: Wiping cloth crumpled on top plastic milk crates. All wiping clothes must be stored in a sanitizing solution or hung to air dry when not in use.

Observation: Several working containers without name of contents. All working containers shall be labeled with proper name of contents if not original packageing.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Microwave soiled. Non food contact surfaces of equipment should be free of dust and food residue. All Surfaces must be clean to sight and touch. Clean as often as necessary to keep clean.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: container of sour cream and Creamy Italian dressing not in original container that was not date marked. All Potentially Hazardous Foods must be date marked if held more than 24 hours.

Observation: Must provide a certified food protection manager for both Elementary and High school. Employee must be a supervisory or manager status. Management may be changing in the next year.

Observation: Dish machine pressure for rinse cycle is 10-15psi. Per data plate on front of dish machine, pressure for rinse cycle must be maintained 15-25psi for proper hot water contact time for sanitizing. Maintenance called and repair.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Slight dirt build-up in corners of kitchen on the floor. Floors are old and worn. If not easily cleanable may need to replace tiles to make surface smooth and easily cleanable.
