Observation: Tomato slicer and cabbage/lettuce slicer soiled with food debris. Utensils cleaned and sanitized at time of inspection.

Observation: Cabbage/lettuce slicer not set on shelf to allow proper air drying. After cleaned and sanitized, proper storage was shown so that air drying could be achieved.
- Multiuse food contact surfaces are cleanable
Observation: Stainless steel spoons found in storage with discolored pitting on the surface. Spoons were discarded.
- Physical facilities maintained in good repair
Observation: Grout in front of the proofer is worn exposing at least a 3/8 inch deep gap, making the floor a less than smooth surface.

Observation: Floor under equipment (proofer, bread holder, etc) soiled with food debris and standing water caused by leak from proofer. Food debris and water cleaned at time of inspection. Vent in the walk in cooler with large amount of dust accumulation. Vent cleaned at time of inspection.

Observation: Leak coming from near the proofer door causing standing water under equipment.
