I discussed the Alabama Seafood Labeling Law with the owner, Mrs. Jing Wang.

Clean the ceiling tiles in the kitchen.

I gave Wendy Wang, the manager, an Online Food Handler Training bulletin. The food thermometer for taking food temperatures was calibrated during this inspection.

3-501.16 Maintain potentially hazardous food at 41 F or below./ On maketable top chicken 60F, raw shrimp 47F, raw chicken 47F-51F, raw pooled eggs 57F, inside unit chicken wings 51F air temp 51F/COS all potentially hazardous foods out of temperature voluntarily discarded
3-501.16(A)(2) Maintain PHF at 41 F or below. PHF in cold holding unit > 41 F due to faulty equipment. Cease use of equipment until repaired and verified by JCDH.

4-302.12 Provide appropriate, readily accessible thermometer for verifying food temperatures.
No long metal stemmed food thermometer which reads 0F-220F for taking the internal temperatures of food.
