    Observation: The [bleach] is not being used according to EPA registered label use instructions and is at [200+ ] PPM.
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Remade bleach so that is was between 50-100 ppm chlorine.

    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Raw shell eggs moved to lower shelf.

    Correction: Discontinue use of sponges on food contact surfaces.

    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Remixed solutions during inspection. Standardize mixing and testing procedures.

    Observation: Ice scoop for ice machine was improperly stored on the shelf used to place raw animal product to be placed in coolers or freezers. Observed direct contact of ice scoop and box storing raw animal product.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Ice scoop washed and sanitized prior to placement into service.
