- KDA_3_10111 - --On sushi menu, establishment states the sale of white tuna. The white tuna this establishment serves is called actually escolar. Escolar is a fish white in color and can have adverse health effects due to its waxy, oily makeup and must be labeled as escolar on menu. Albacore tuna is pale in color and often called white tuna. PIC stated sign will be made and put up with the correct information.
- KDA_3_30212 - --Observed msg, salt, sugar on cart next to wok stove with no common name. Items can be mistaken for one another. COS- labeled.
- KDA_3_50113A - --Observed frozen chicken and pork thawing in plastic tubs prep sink sitting in water. COS- turned on cold running water to aid in thawing process. Observed frozen crab thawing in handsink in a container of water. COS- taken to WIC
- KDA_3_50116A2 - --Stored on cart next to wok, metal container of garlic in oil with an internal temperature of 66.7F. PIC stated garlic and oil had been out of refrigeration since 11am. Temperature taken at 12:40pm. COS- put on ice/water. Temperature taken at 1:44pm 41F
- KDA_3_50118A2 - --Stored on wire shelf in WIC, large container of crab Rangoon cream cheese filling with no date of preparation. Stored in True RIC#2, establishment prepared salad dressing with no visible date of preparation. COS- all date marked.
- KDA_4_10111A - --Previously cooked chicken stored in non food grade plastic steralite container. COS- removed and placed in food safe container.
- KDA_4_204112B - --No temperature measuring device observed in prep tables.
- KDA_4_60111A - --Chicken rake stored as clean, soiled with dried on food debris. COS- washed/rinsed/sanitized.
- KDA_5_20511B - --Observed a metal container of crab in basin of handsink near fryer. PIC stated crab was thawing. COS- taken to WIC.
