  • KDA_4_70211 - --There is no evidence that wares and utensils are being sanitized before use, after cleaning. The PIC/manager says that they bought a big "tub" for sanitizing, but he cannot find it now. Items to be cleaned include 2 coffee carafes, a reusable plastic container with lid holding unwrapped pastries (in the RIC), two plastic dry cereal dispensers, and plastic trays used for pastries in the pastry case, and the pastry case.
  • KDA_8_10312A - --They are not complying with the terms of their Variance request and approval, for using the third sink (in the laundry room) for sanitizing dishes and wares. The large pastry trays, coffee carafes, pitcher for orange juice, and plastic container with lid used for pastries won't fit in the small handsink intended to be the third compartment, anyway. They would need to propose an alternate sink or an alternate method of sanitizing. If they wish to use a tub for sanitizing, they will need to apply for another Variance.
