KDA_3_50116A1 - --In the Hot Holding display case, there were two packages of popcorn chicken measuring 101.7 F and 105.2 F. The store temperature logs indicated that the chicken had been removed from the fryer and placed in the display 1 hour and 20 minutes prior. Corrected on Site - Removed and reheated in the microwave to 186 F. In the Steam Table there was 1 (of 20) chicken strip which measured 120.1 F. The store temperature log indicated that the chicken had been removed from the fryer and placed in the steam table 1 hour prior. Corrected on Site - Employee chose to discard the one piece

5-202.14 - A backflow or backsiphonage prevention DEVICE installed on a WATER SUPPLY system shall meet American Society of Sanitary Engineering (A.S.S.E.) STANDARDS for construction, installation, maintenance, inspection, and testing for that specific application and type of device.
KDA_3_50116A1 - PHF/TCS Hot Holding - POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURECONTROL FOR SAFETY FOOD) shall be maintained at 57°C (135°F) or above.
