07/25/2014 | Inspection | The following food temperatures were measured (degrees F): Hotpoint Refrigerator: Bologna - 32.6; Walk-in cooler: Chicken Parmesan - 50 to 52; Serving Line: Macaroni & Cheese - 140 to 147, Chicken Parmesan - 142 to 149. The Chicken Parmesan in the walk-in cooler had been removed from the cooler and kept at Room Temp for 15 to 20 minutes while a portion of it was placed in the warmer for lunch. The remainder in the cooler had been in the cooler for 20 minutes, so the longest that it was at this temp was about 40 minutes. Ben uncovered the tray of Chicken Parmesan in order to allow it to cool faster. Report e-mailed. |
