09/08/2014 | Inspection | Told the owner that he needed to obtain a probe thermometer before they use their kitchen facility to prepare the next batch of chicken wings. The owners are waiting for a quote from Sausbiers on the cost of installing an automatic fire suppression system for their kitchen fume hood. The owner told me that they use both the table top deep fryer and the larger, commercial sized deep fryer to prepare the chicken wings. They do not plan on serving the wings in washable dish ware but will use baskets lined with disposable liners. They also plan on serving burritos in baskets sometime in the near future. Need to send copies of previous e-mails to the owners. Report e-mailed. |
