08/06/2015 | Inspection | all refrigerator units were operating well chicken wings at 39 deg F prep cooler in front was holding at 43 deg F. a new hood has been installed for the fryers and the owner stated he discussed the pizza oven ventilation with Dave Ross and he said it would be fine without it he does want to put ventilation in because it gets to hot. I informed the operator that nysdoh requires ventilation for cooking equipment. |
