02/20/2016 | Inspection | All hot and cold hold food temperatures measured with a metal stem probe thermometer are acceptable. Proper cooling was discussed and observed. At least one thermocouple thermometer is recommended for this operation for better efficiency and accuracy. The owner has stated that he might possibly relocate the kitchen to the rear room. If this decision is made then he will contact our office to request a plan review packet prior to any changes or modifications.
