04/07/2015 | Inspection | The Air Temperature in the Walk-In Cooler was 40 degrees F. Measured the temp of a tray of gravy in the Walk-In and found it to be 106.2 degrees F. at 1:25 PM. The operator said that this tray was placed in the Cooler at 12:00 PM at about 180 degrees F., so we figured that the food item has been at 120 degrees F or less since about 1:00 PM. The operator removed the plastic wrap from covering this tray and let it cool uncovered in the Walk-In Cooler. At 1:50 PM the temperature was measured at 87.3 degrees F. Measured the Temperature on Four Trays of Mashed Potatoes prepared between 11:00 AM and 12:00 PM and found all four to be between 58.9 degrees F and 67.4 degrees F. The operator uncovered all of the trays and transferred the contents of the two, six inch deep trays to four inch deep trays. Explained to the operator that they have four hours to cool the mashed potatoes to 45 degrees F. According to our calculations, they have two to three hours left to cool the Mashed Potatoes to 45 degrees F or less, and about one hour to cool the gravy to 70 degrees F or lower, then four hours to cool it to 45 degrees F or less. Kitchen shares a well with the Department, and the county is in charge of water Maintenance and upkeep on water appliances. Chlorine residual is adequate at 1.5. Food temperatures are monitored and food is shipped out by 10:00am. Bathrooms now have nice, self-closing doors on them. Email all four OCNP inspection forms to this email address. |
