A food employee was observed touching bread - a ready to eat food - with bare hands (bagging bread to go). Also observed a server adding parsley to food with bare hands just prior to service. Corrected.

Some foods were held at 47 °F, in one of the bain marie units at the cooking line, rather than 41°F or below as required. Disposed of product, moved some foods to other refrigeration, and iced the bins in the top of the bain marie. Lids will be kept closed as much as possible. A call will be made for service on the unit.

No thermometer available in refrigerator #10 in the kitchen. Corrected.

The soda guns at the bar, a food contact surface, were observed to have slime, residue and was not clean to sight and touch. Corrected.

Plumbing system not maintained in good repair - observed water leaking at the handwash sink at the left end of the cooking line. The drain line for one of the pasta cookers in this area is also leaking water. A plumber is scheduled to repair these items next week.

The lid was not closed on the grease bin in the outside trash area. Corrected.
