    Floors throughout kitchen are in need of detail cleaning, food waste, spills. Floor drains, walk-in, grease trap and under equipment, perimenter of all rooms must be cleaned.

    Potential rodent harborage areas inside the food facility observed under all service counters and in floor drains, mop sink, behind refrigeration equipment. Remove all containers, scales under all service shelves. Sanitize area and seal all electrical, plumbling connections. Do not store any unused items under shelves so area can be inspected and routinely cleaned. Employees need a dry vaccuum with hose to reach the rear cabinents rodeent droppings. Floor drains are filled with food waste. Flies are present in rear kitchen near prep table. Replace cleaning mops, equipment with clean heads. Hang equipment so they dry properly. Keep dust pan empty, currently full of stagnant water. Attraction for flies. Move refrigeration equipment rear and clean up standing stagnant water.
