Chili placed into the walk in approx 4 hrs before inspection was 91*F. This product was reheated then cooled with a cooling paddle and ice bath. Burgers precooked and placed into walk-in double or triple layered approx 2 hrs prior were 90*F. These were separated onto single layer trays to cool quickly.
