The preset table ware is not wrapped nor inverted to prevent from contamination.
- Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
There was no handwash signs in the kitchen to remind workers to wash their hands. This was corrected during the inspections.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
Facility is generally aged abeit is well kept. There is a small portion of floor near the grill line which is not finished. Parts of the linoleum have worn in places such that it is not smooth nor easily cleaned. There is a 16 inch by 4 foot section of ceiling missing in the one dry strorage area. There is some fiberglass insulation exposed in this area.

- Food Storage Requirements & Prohibited Areas (46.321)
Noted prevoiusly, 'Upright freezer has a heavy accumulation of frost...". Today, I find that same unit has an accumulation of frost. The unit does not have a tight fitting seal. Owner said they must defrost the unit manually every few months.
- Cooling, Heating, & Holding Capacities (46.611)
The walk in cooler is holding foods at 42 deg. F. The maximum allowable is 41 deg. F. This unit may be more stessed as the season and summer progresses. Owner said she will monitor this unit and make adjustments such to assure potentially hazardous foods ar held below 41 deg. F.
- Handwashing Facilities for Employees and Consumers Required (46.823(a) & 46.941(a))
There is no sign in the kitchen to remind workers to wash their hands. Said sign is to be placed in proximity to the handwash sink.
- Cleanability of Floors, Walls, & Ceilings (46.921)
There is a small area (2-3 ft square) in the NW corner near the grill line. There is some standing water there and the baseboard is missing. Owner said they recently noticed this water and believes it may be from a water line leak.
- Light Bulb Protective Shielding (46.922(a))
Some lights in the kitchen are not shielded.
