    --Assistant manager described cooling PHF's in deep containers and leaving at room temperature for an hour prior to refrigerating. Reviewed proper cooling methods and suggested using an ice bath for cooling.

    --Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required.
