    --Two contains of soup, 1 container of chili which was cooled, was not reheated to 165°F within two hours, for hot holding. PIC states items were put into steam table at approx 09:30 and internal temperature at time of inspection was 72F. Items were removed from steam table and being reheated on stove to a min of 165 for 15 seconds as required.
  • Food Temperature Measuring Devices Provided (46.632)
    --Firm remains without a irreversible temperature measuring device or thermal strips to monitor the sanitizing cycle of the mechanical dishwasher.
