The food-contact surfaces of equipment and utensils did not reach 160 degrees F during the sanitizing cycle of the high temperature dishwasher as evidenced by the failure of the temperature indicator test strips and thermometer used to check plate / water temperature of the final rinse . firm to conduct mannual sanitizing of the multi use dishware and equipment and / or use single service until dishwasher can properly sanitize and machine is rechecked . 03/10/2010 warning letter to be sent. o n 03/01/2010
