--Build up of grease and old food residue beteen the stove and fryer. *The bottom left shelf of the cook line prep table is cluttered with papers, labels, books, tape, plastic, etc. *Dust on the window screen behind the pot wash sink. *Dust build up on the exhaust fan in the wall above the Traulsen refrigerator in the kitchen. *Food residue and debris on the floor in the walk-in cooler.
