    --A severely dented can of tomato sauce was observed on a can rack in the dry storage area with other intact cans. Designate an area, separate from all intact cans, where dented cans are to be placed for return and credit. Instruct employees on where to place the dented cans.
  • In-Use Utensils & Between Use Storage (46.302)
    --An ice cream scoop was stored in a cup of standing water which was full of floating food debris. Clean and sanitize the scoop and cup immediately. Instruct employees to store the scoop in the available dipper well, with the water running, when not in use.
  • Maintenance & Operation of Manual Warewashing Equipment (46.676(a)-(c))
    --Employee was observed using a three-bay sink which was not setup properly. The employee was washing then sanitizing and then rinsing. Instruct employees on the proper set up and use of the three-bay sink.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --The shelving in all of the walk-in refrigerators and freezer requires cleaning to remove food debris which has accumulated on the wires. The fan covers in all of the walk-in refrigerators and freezer require cleaning to remove dust. Clean all of the shelving units and fan covers and maintain them in a clean condition.
  • Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
    --No sign or poster posted at the hand washing sink in the women's restroom to remind food employees to wash their hands. Post a sign at this sink.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Water stained ceiling tiles were observed throughout this facility. Owner states the landlord repaired the roof. Replace all stained ceiling tiles.
