Person in charge failed to monitor and control the food borne risk factors, as evidenced by the following violations.
- Eating, Drinking or Using Tobacco (46.151(a))
An open employee's beverage container was observed on food preparation table.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Cheese, ham, sliced tomatoes, and meatballs were held at 55, 51, 60, 56 °F respectively, in two separate reach-in coolers., rather than 41°F or below as required. Products disposed for corrective action.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
Commercially processed ready to eat food, located in the reach-in coolers, and held more than 48 hours, are not being marked with the date it was opened.
- Storing Clean Items (46.774)
Observed single-service, single-use articles stored, not in the original protective package, and exposed to dust and debris.
- Quality of Water (46.804)
Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability.
- Maintaining & Using a Handwashing Facility (46.825(a) & 46.981(h))
Sanitizer bucket observed in basin of hand sink
- Operation & Maintenance of Storage Areas, Redeeming Machines, Waste Receptacles & Waste Handling Units (46.884)
Observed several trash bags of refuse stored outside the food facility and not in the closed waste handling units.
- Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
The hand wash sink in the rear area did not have single use towels, continuous towels, or air drying device.
