--Chicken pot pie, which was cooled, was not reheated to 165°F within two hours, for hot holding. The chicken pot pie was found on the counter and temped at 100F. The chicken pot pie was thrown away.
- Hot Holding Potentially Hazardous Foods (46.385(a)(1))
--Beef and chicken gravy were held at 90°F, in the steam table, rather than 135°F or above as required. The steam table had not been turned up/on for lunch. Both items were thrown away.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Basement walk in refrigerator was found between 43F and 45F. The cole slaw in the salad bain marie (next to the dishwasher) was found at 44F and the unit the same temperature. Potentially hazardous foods need to be moved to another refrigerator until the temperature of both units is lowered.
- Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
--The following need to be cleaned and maintained. 1. Table under the dough mixer, especially below the pieces of black mat. Holes are filled with debris. 2. Unused refrigerator under the toaster. Clean around the doors and inside. 3. Both microwaves. 4. Clean the underside of the shelf over the steam table, food splash. 5. Hand sink had paper towels on arrival but ran out. Replace paper towels.
- Materials in Multiuse Utensils & Food-Contact Surfaces (46.521)
--Thoroughly bleach and scrub the long cutting board on the salad bain marie. It is getting stained. If it cannot come clean, it will need to be replaced.
- Equipment in Good Repair & Proper Adjustment (46.671)
--All three door gaskets on the Beverage Air refrigerator next to the dishwasher are falling apart. The same was observed on the other bain marie. Replace the gaskets so that they can be easily cleaned and maintain a proper seal.
- Materials, Design, Construction & Installation of Storage Areas & Waste Receptacles (46.881)
--Keep the lids closed on the dumpster at all times. This is to prevent an infestation of insects, rodents, and/or birds. Close and maintain.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
--Fix the broken/missing floor tiles under the grill in the kitchen. The floor in this condition cannot be easily cleaned and is in bad repair. Correct and maintain. Replace the missing vinyl tiles behind the service counter.
- Light Bulb Protective Shielding (46.922(a))
--Lights are not shielded or shatter proof over the ice machine in the basement. The ice machine has only recently started being used. Provide a shield or shatter proof bulbs.
