Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Observed reach-in refrigerator with an ambient air temperature of 68 degrees F. This unit was not turned on after the "flash" explosion which occured yesterday morning. The only potentially hazardous food (PHF)stored in this unit was 15 bottles of rice milk clearly marked by the manufacturer "keep refrigerated." 15 bottles disposed valued at $38 dollars.
Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
Observed construction type dust from ceiling tiles replaced this morning on counter tops, three basin sinks, hand wash sink, and on the floor of the meat cutting room. Compliance required before re-opening this store or before any food preparation is conducted.

Light shields in the meat cutting room were broken as a result of the 'flash" explosion.
