RTE PHF was held at 51-57 degrees F rather than 41 degrees F or below as required in the Bev-Air prep cooler. Sausage 51*F, crushed tomato liquid 52*F, American cheese slices 57*F. All were discarded. See item #31.

Noted Bev-Air prep cooler not maintaining PHF at 41*F or less. Ambient air at 52*F and items at 51*F to 57*F. Do not use this cooler for PHF again until it can maintain 41*F or less. This unit has been cited previously. Correct by September 6, 2010.
