Plastic utensils used for cooking ( paddle head for the long handled cooking spatula) is deformed and misshapen from heat, and has melted ragged surfaces. No longer acceptable under normal use in the food facility. Paddle head was removed from food service

One, probe type hot food monitoring thermometer no longer usable due to looseness unit will not maintain calibration. Indicated thermometer was disposed of remaining thermometer was found satisfactory. order a new probe thermometer for back-up ASAP.

Posted written mixing directions for the Oasis brand 146 Quat. sanitizer found to be inaccurate and exceeded mfg. use directions on concentrate jug as a no-rinse final food equipment sanitizer. New mixing directions were worked out using a measured water volume and using the sink mounted sanitizer concentrate pump to 200 ppm.
- Food Temperature Measuring Devices Calibrated (46.691(b))
Five probe thermometers for ensuring proper food temperatures were not calibrated and were reading 10*F. low when checked in an ice water slurry solution. Instruction provided and thermometers were re-calibrated. Note: Thermometer calibration check was only being conducted monthly.
