    --Observed an in-use knife stored between a table edge and a refrigerated food prep unit, an area not easily cleaned and sanitized. Instruct employees to store clean knives on a knife rack or in a clean utensil drawer.

    --The gasket on the door of the Traulsen refrigerator is torn. Replace the torn door gasket.
