Food employee observed donning single use gloves without a prior hand wash.

Two open employee's beverage containers were observed in a food preparation area.

Owner stated they cool their bulk sauce by pouring it into smaller pots. No rapid cooling method in use. Discussed with owner the use of an ice bath for cooling sauce from 135*F to 70*F in 2 hours and from 70*F to 41*F in an additional 4 hours.
