    Owner stated they cool their bulk sauce by pouring it into smaller pots. No rapid cooling method in use. Discussed with owner the use of an ice bath for cooling sauce from 135*F to 70*F in 2 hours and from 70*F to 41*F in an additional 4 hours.

    Observed knives on hotline stored in a butcher block scabbard. Owner removed scabbard for corrective action.

    Side kitchen door was open. No screen to protect against the entry of insects. PIC closed door for corrective action.
